LIST OF INGREDIENTS
Step 1
Peel the potatoes, then finely grate them. Press them in a clean cloth to remove as much water as possible. Place them in a bowl, add the beaten egg and the flour. Season with salt and pepper, then mix until a homogeneous mixture is obtained.
Heat a mixture of butter and oil in a pan. Place small portions of the mixture, flatten them slightly and cook for 3 to 4 minutes on each side until golden brown. Keep warm.
Step 2
Mix the fresh cream with the lemon juice. Lightly season with salt and pepper.
Step 3
Arrange the crispy potato cakes on a plate. Add a spoonful of lemon cream on top or on the side. Sprinkle with finely chopped chives. Finish with a spoonful of Truffle Flavor Beads. Serve immediately.
