Avocado Mousse with Shrimp

LIST OF INGREDIENTS

Avocado mousse

2 ripe avocados
1 tblps lime juice
3 tblps full-fat liquid cream
Fine salt
1 pinch Espelette pepper

Topping

12 cooked and peeled shrimp
1 firm avocado
1 tblps lemon juice
A drizzle of olive oil
1 tblps freshly chopped chives
Freshly ground black pepper

Presentation

Grapefruit flavor pearls
Fresh chives

Step 1

To prepare the avocado mousse

Blend the avocado flesh with the lime juice, cream, salt and Espelette pepper until smooth.
Refrigerate until ready to use.

Step 2

To prepare the garnish

Dice the avocado into small cubes and season with lemon juice and a drizzle of olive oil.


Cut the shrimp if necessary and lightly season with freshly ground black pepper.

Step 3

Assemble

Place a layer of diced avocado at the bottom of each serving glass. Arrange the shrimp neatly along the sides.


Using a piping bag fitted with a star nozzle, pipe the avocado mousse on top.

Step 4

To finish

Add the Grapefruit Flavor Pearls and sprinkle with chopped chives. Serve well chilled.
