Step 1
Blend the avocado flesh with the lime juice, cream, salt and Espelette pepper until smooth.
Refrigerate until ready to use.
Step 2
Dice the avocado into small cubes and season with lemon juice and a drizzle of olive oil.
Cut the shrimp if necessary and lightly season with freshly ground black pepper.
Step 3
Place a layer of diced avocado at the bottom of each serving glass. Arrange the shrimp neatly along the sides.
Using a piping bag fitted with a star nozzle, pipe the avocado mousse on top.
Step 4
Add the Grapefruit Flavor Pearls and sprinkle with chopped chives. Serve well chilled.
