LIST OF INGREDIENTS
200 g peeled shrimp
2 ripe avocados
1 lime
200 ml heavy cream (very cold)
1 tsp lemon zest (yellow or lime)
1 tbsp lemon juice
Salt, pepper
A pinch of Espelette pepper (optional)
Fresh chives

Step 1
To prepare the avocado
Cut the avocados into small cubes. Drizzle with lime juice, season with salt, pepper, and a pinch of Espelette pepper. Mix gently.
Step 2
To prepare the shrimp
Cut the shrimp into smaller pieces if needed. Lightly season with salt, pepper, and a bit of lemon zest.
Step 3
To make the lemon whipped cream
Whip the very cold cream until firm. Add the lemon zest, a pinch of salt, and a little pepper.
Step 4
Assembly
Add a layer of avocado at the bottom. Top with shrimp and finish with the lemon whipped cream (using a spoon or piping bag).
Step 5
To finish
Add a spoonful of Grapefruit Flavor Pearls on top and sprinkle with finely chopped chives.
