Fluffy Pancakes

LIST OF INGREDIENTS

Package batter

250 g flour
30 g sugar
1 packe baking powder
1 pinch of salt
2 eggs
30 cl milk
40 g melted butter
1 tsp vanilla extract

Caramel

120 g sugar
20 cl full-fat liquid cream
30 g butter
1 pinch fleur de sel

Whipped cream

20 cl full-fat liquid cream
20 g icing sugar

Step 1

To prepare the pancake batter

Mix the flour, sugar, baking powder and salt. Add the eggs, milk, melted butter and vanilla. Stir gently until smooth and combined. Let the batter rest for 15 minutes

Step 2

Cooking the pancakes

Heat a lightly buttered pan over medium heat.

Pour in a ladle of batter. When bubbles appear on the surface, flip the pancake and cook for about 1 minute more. Repeat until all the batter is used.

Step 3

Making the caramel

Melt the sugar in a saucepan until it turns amber.

Remove from the heat and carefully add the warm cream while stirring, then the butter and fleur de sel. Stir until smooth. Let cool slightly.

 

Step 4

To prepare the whipped cream

Whip the cold cream, add the icing sugar, and continue whipping until firm and airy. Refrigerate until ready to use.

Step 5

Presentation

Stack the pancakes. Drizzle with caramel, add a swirl of whipped cream, and top with caramel spheres. Lightly dust with icing sugar and serve immediately.
