Step 1
Preheat the oven to 110°C (230°F).
Whisk the egg whites until stiff peaks form. Gradually add the sugar until the meringue becomes firm and glossy.
Gently fold in the cornstarch and lemon juice.
Pipe or shape 4 discs (about 8 cm wide) on a baking sheet lined with parchment paper, creating a slight hollow in the center.
Bake for 1 hour 15 minutes. Turn off the oven and let the meringues cool inside with the door slightly open.
Step 2
Whip the cold cream until firm peaks form. Add the icing sugar at the end of whipping and refrigerate until ready to use.
Step 3
Top each meringue generously with whipped cream.
Step 4
Add diced mango, the Passion Fruits Flavor Pearls, mint leaves and a little lime zest.
Serve immediately to preserve the contrast between the crisp meringue and the soft toppings.
