Salmon & Cucumber Bites

LIST OF INGREDIENTS

Base

1 cucumber
200 g fresh salmon
Freshly ground black pepper

Cream

80 g plain cream cheese
1 tblsp full-fat liquid cream
Zest of ½ lemon

To finish

Radish microgreens
Ponzu flavor pearls

Step 1

To prepare the cucumber

Wash the cucumber and cut it into slices about 1 cm thick. Arrange on a serving platter.

Step 2

To prepare the salmon

Cut the salmon into cubes slightly smaller than the cucumber slices.

Season with freshly ground black pepper and place one cube on each cucumber slice.

Step 3

To prepare the cream

Mix the cream cheese with the cream until smooth. Add the lemon zest.

Transfer to a piping bag and pipe a small dollop onto each salmon cube.

Step 4

Finish

Top each bite with Ponzu Perles de Saveurs and garnish with radish microgreens.

Serve well chilled.
