Step 1
Preheat the oven to 150°C (300°F).
Mix the cream cheese and sugar until smooth. Add the eggs one at a time, then incorporate the cream, lime zest and lime juice.
Pour into 4 lined pastry rings and bake for about 50 minutes. The center should remain slightly wobbly.
Allow to cool in the oven for 30 minutes with the door slightly open, then refrigerate for 2 hours.
Step 2
Whip the cold cream in a chilled bowl until firm peaks form. Add the icing sugar at the end and refrigerate until needed.
Step 3
Unmold the cheesecakes. Pipe whipped cream in a spiral on top, place the Raspberry Flavor Pearls in the center and sprinkle with lime zest. Serve well chilled.
