Step 1
Rub the flour and diced butter together until the mixture resembles fine crumbs. Add the sugar, egg and salt and mix briefly to form a soft dough.
Wrap and refrigerate for 1 hour.
Roll out the dough and line buttered tartlet molds. Cover with baking paper and baking weights and bake at 180°C (350°F) for 15–20 minutes until lightly golden. Let cool.
Step 2
Mix the mascarpone, icing sugar and orange blossom water until smooth. Refrigerate until ready to use.
Step 3
Fill the tartlets with the cream, arrange the strawberries in a rosette pattern and add the Orange Blossom Flavor Pearls.
