Passion fruit vinaigrette

Step 1
Coat the tuna with sesame seeds.
Sear in a hot pan with sesame oil for 30 seconds to 1 minute on each side. The outside should be seared while the inside remains rare.
Season with fleur de sel and freshly ground pepper. Let cool slightly before slicing.
Step 2
Mix the passion fruit purée, soy sauce and lime juice.
Slowly drizzle in olive oil while whisking to emulsify.
Step 3
Blend the avocado flesh with the lime juice, olive oil and cream until smooth. Season with a pinch of fleur de sel and freshly ground black pepper. Transfer to a piping bag and refrigerate until ready to use.
Step 4
Arrange the sliced tuna on plates.
Add cucumber slices, spring onion, rocket shoots and small dots of avocado cream.
Drizzle with the vinaigrette and finish with Balsamic Vinegar Flavor Pearls and sesame seeds.
Serve immediately.
