Herring with Roasted Potatoes

LIST OF INGREDIENTS

12 baby new potatoes
2 herring fillets
2 tblsp olive oil
Fleur de sel
Freshly ground black pepper

Marinade

1 tblsp apple cider vinegar
1 small shallot, finely minced
Fresh dill

To finish

Shallot & Vinegar flavor pearls

Step 1

Roast the potatoes

Preheat the oven to 200°C (390°F).

Wash the potatoes. Slice a thin piece off the bottom to stabilize them and trim the tops slightly.

Place on a baking tray, drizzle with olive oil, season with salt and pepper, and roast for 25 minutes until golden and tender.
Let cool slightly.

Step 2

Prepare the herring

Cut the herring fillets into pieces sized to fit the potatoes.

Season with apple cider vinegar, minced shallot and fresh dill.

Step 3

Assemble

Place a piece of herring on each potato.

Step 4

Finish

Add the Vinegar and shallots Flavor Pearls and garnish with a small sprig of dill.

Serve at room temperature.
