Step 1
Cut the salmon into small, even cubes and place it in a bowl. Season with olive oil, a drizzle of yuzu juice, soy sauce, salt and pepper. Mix gently, then set aside in the refrigerator.
Cut the avocados into small cubes and immediately drizzle them with lemon juice to prevent oxidation. Finely slice the red onion as well as the chives.
Step 2
Using a plating ring, arrange the mixture of salmon, avocado, onion and herbs, alternating layers or mixing them depending on the desired presentation. Lightly press to hold the shape.
Place a spoonful of Delicate Flavor Beads in the center. Add a lemon wedge on the side. Serve well chilled.
