Step 1
Cut the tuna into even blocks. Mix the sesame seeds on a plate and coat the tuna on all sides. Heat a pan with a drizzle of oil and sear the tuna briefly, about 30 seconds per side, keeping the center raw. Let cool slightly, then cut into even cubes.
Step 2
Wash the cucumber and slice it thinly using a mandoline. Arrange the slices in a fan shape on the plate.

Mix the soy sauce and sesame oil.
Step 4
Place the tuna cubes on the plate. Add the shoots in the center. Drizzle with the dressing. Distribute the Ginger Flavor Pearls over the tuna and around the plate. Serve chilled.
